Honey Quinoa Salad with Honey Vinaigrette
-1 c. quinoa (dry)
-1 ½ c butternut squash, finely chopped
-2 c Kale, de-ribbed, cut in ribbons
-1 clove garlic, minced
-1/4 c craisins
-1/2 apple, chopped (peeled if desired)
-1/4 c feta, goat, or white chedder cheese, crumbled or cubed
-3-4 green onions, diced

Dressing:
2 T olive oil
3 T White Wine Vinegar (or red wine will work too)
1 T honey
Salt/pepper to taste

In medium sized bowl, mix dressing ingredients. Cook quinoa according to package directions, then put in bowl with dressing. If you hate cutting butternut squash, the pre-cut package might just be for you, it is a lot of work. Sauté the squash in 1T oil (olive, butter, etc), until lightly browned, scoop into bowl. Then sauté the kale with 1 T oil and garlic, until wilted, and dump into bowl. Add the rest of the ingredients, stir until combined and serve warm or if desired, make it ahead of time and it’s great chilled. Salt and pepper to taste.
