Chocolate or Mocha Roasted Nuts
So, if you’re like me, and you enjoy chocolate, and you don’t like spending more than you have to at the grocery store, I have a great way to save money if you like those certain cocoa roasted nuts at the store.  This recipe takes about 5 minutes to make and 30 minutes to bake.  VERY EASY and it uses some of that delicious RJ Honey which is so very HEALTHY for you!  So, try it today!
Ingredients:
-about 4 c of nuts (in these pictures I mixed peanuts, almonds, pecans, and walnuts)
-4 T honey (keep coating nuts till nice and sticky)
-4-5 T cocoa or carob (I like the nutty slightly sweet flavor of carob)
-Optional: 2 T instant coffee (if desired, makes a nice ‘mocha’ flavor)

Place nuts in a greased 9x13 pan, coat with honey, stir till nice and sticky.  Dust with cocoa powder (and coffee) and keep stirring until all the nuts look dusty and coated.  Place in oven at 300, and bake total 30 minutes, but pull out after 15 minutes and stir.  The nuts should get kind’ve wet looking, as the honey heats the cocoa will soak in, and when you stir at 15 minutes, dust with more cocoa as needed to make them mostly coated again.  Finish the 30 minutes then let cool.  The nuts will crisp up as they cool, so don’t worry if they seem a little ‘soggy’ when you pull them out.  Best stored in an airtight container.
