Mocha Chia Peanut Butter

If you’ve never made peanut butter, don’t be intimidated, it’s SO easy. The only requirement is a food processor. This is one of my favorite mixes so far!

16 oz dry roasted peanuts (unsalted best, but salted can work too)
1 t vanilla
2 T instant coffee
2 T honey
3 T cocoa or carob
1 T chia seeds (can skip if desired or sub flax)
½ t salt (if using unsalted peanuts)

Opt: 1-2 T coconut oil (helps PB get creamier texture), also, if you want it crunchy, reserve ¼ c of peanuts and chop with a knife or in a chopper.
Put peanuts in your food processor and let it run for about 2 minutes until the peanuts are turning into a paste.

Add the vanilla, honey, and coconut oil (if desired) and let it run for another 2 to 3 minutes until it looks pretty much like PB. Add the cocoa, coffee, and chia seeds and let it continue to smooth out the PB until it runs smoothly (another 1-2 minutes).

If desired, at this point add the extra chopped nuts and pulse 2-3 times until combined. Then put into desired container (this recipe makes slightly over 16 oz of PB. Enjoy!
