Honey Nut Granola
"A healthy snack for anytime."
-6 c rolled oats
-1 c water
-1 stick of butter (or ½ c coconut oil)
-3/4 c RJ Honey
-1/2 bag of shredded coconut (omit if desired)
-1 c chopped nuts (almonds, pecans, walnuts etc.)
-1 t cinnamon
-1 t vanilla
-Opt. ¾ c. dried fruit (craisins are my favorite),2-3 T flax, or extra nuts

-Pre-heat oven to 300 or 325
-In a 9x13, melt the butter in oven while you get out the rest of the ingredients, when the butter is mostly melted, pull out your pan and add the oats and water and stir until the oats are wet. Add the rest of the ingredients, and stir until combined. The temperature of the oven can be changed depending on your day’s schedule. If I’m in a rush, I’ve done this at 350, you just have to watch closely because it browns faster. 300-325 gets consistent results, usually taking 3-4 hours, stirring once an hour or when you see the top is brown. To determine if it’s dried, let a clump cool on the counter, if it gets crispy, then it’s done, but if it’s still soggy, then the granola needs to go longer.
Some tips and changes: if using unsweetened coconut, add extra honey or brown sugar as your granola will be less sweet. Also, beware the coconut will brown fast so if you can remember, add it after 1-2 hrs of cooking. Also, if you add dried fruit, add it in the last hour unless you like it crispy.
