Honey Pumpkin Crunch

-16 oz pumpkin
-4 eggs
-1/2 c ricotta
-2 T milk
-1/2 c honey
-1 t vanilla
-1 t pumpkin pie spice
-¼ t salt
Mix the above ingredients until thoroughly mixed, pour in a greased 8x8 (or I used my pampered chef loaf pan), then mix together the crunch:
-1/2 c rolled oats
¼ c butter, melted
¼ c pecans, chopped
1 t cinnamon
3 T honey
Bake at 350 until the center is set, about 35 minutes.
This is a pumpkin crunch that you can feel good about eating, lots of protein and vitamins, not to mention some fiber to keep you full. Enjoy some fall goodness!
